Indigenous white grape variety "exclusively" Sicilian, it is among the most cultivated vines on the island.
The Catarratto in the various versions has a good resistance and an abundant production, with any form of breeding, moreover it does not lose its acidity quickly near the maturation and does not synthesize high sugar contents, it fears instead the attacks of powdery mildew, of the moths and gray mold.
Cultivation area: Valle del Belice - Sicilia Occidentale
Vinification: Selection of excellent Catarratto grapes harvested in boxes on reaching optimal ripeness; transfer to the cellar in the early hours of the day, soft pressing, cooling of the crushed grapes and sending to soft presses, decanting and subsequent fermentation in steel at controlled temperature with the addition of selected yeasts. The parking of the wine on the noble lees lasts for a few months.
Aging: The storage takes place at a controlled temperature, to maintain the freshness of the aromas unchanged, for about 5 months until bottling.
Color: Pale yellow with greenish reflections.
Hint: Delicate and fragrant with fruity hints of grapefruit, passion fruit white peach.
Taste: Fresh, dry and harmonious with a pleasant bitter aftertaste characteristic of the grape variety.
