Description

Autochthonous white grape variety, probably of Apulian origin, planted in Sicily in the late nineteenth century, after the arrival of phylloxera. Today widespread especially in western Sicily; it has medium-large, spherical and yellow grapes.

Cultivation area: Valle del Belice - Sicilia Occidentale

Vinification: The best Grillo grapes selected and harvested in boxes on reaching optimal ripeness; transfer to the cellar in the first cool hours of the day, soft pressing, cooling of the crushed grapes and sending to soft presses, decanting and subsequent fermentation in steel at controlled temperature with the addition of selected yeasts. The parking of the wine on the noble lees lasts for a few months.

Aging: The storage takes place at a controlled temperature, to maintain the freshness of the aromas unchanged, for about 5 months until bottling.

Color: Straw yellow.

Hint: Intense with hints of hay and exotic fruit.

Taste: Pleasantly fresh, decisive and with a strong personality.

Pairing: Seafood appetizers and fish-based first courses.
