The origin of this grape is controversial: from the distant city of Schiraz in Persia or from the city of Syracuse in Sicily? What is certain is the current place of cultivation, the Rhone Valley in France, from where it spread as well as in central and southern Italy, in Australia, considered the second home of this prestigious grape.

Cultivation area: Valle del Belice - Sicilia Occidentale

Vinification: Selection of the best Syrah grapes harvested in boxes on reaching optimal ripeness; transfer to the cellar, soft de-stemming and crushing and sending to the stainless steel fermentation tanks at controlled temperature with the addition of selected yeasts, the maceration lasts about 15 days after which a soft pressing is carried out.

Aging: At the end of alcoholic fermentation, the wine carries out malolactic fermentation partly in steel tanks and partly in small wooden barrels. After about 6 months of aging, the wine is bottled.

Color: Intense ruby red.

Hint: Characteristic and lively aroma of berries with spicy notes of tobacco, eucalyptus and sage.

Taste: Warm and dry, balanced in its wide structure.

Pairing: Red meats, game, first courses with meat sauces, cheeses in general and in particular with seasoned.
